Predicate

In addition to the German Wine Act, the late harvest grade can also be found in Austria. In Germany, quality wine with a predicate. The late harvest follows the predicate cabinet and is the forerunner of the selection. The degree of ripeness, must weight or sugar content, measured in degrees Oechsle, of the grapes are decisive for vinification. As a rule, Spätlese is always sweet or fruit-sweet. If a late harvest is completely fermented and has no more residual sugar, then the additive is added dry. The lower limits for the Spätlese Oechsle Grade are defined differently in the respective German growing areas.
The late harvest has a long tradition in Germany and its reputation suffered a lot in the 70s and 80s. Too sticky sweet, almost sticky sweet and with too little tartaric and malic acid, the sweet-acid balance was simply not there. Today we find wonderfully balanced Riesling Spätlese from the Nahe or the Moselle, which are now also being loved around the world.
