Until the middle of the last century, the estate was a mixed farming operation. At some point you noticed that the conditions on the edge of the Palatinate Forest with soils and slopes are ideal for making wine. The first bottles were filled in 1973 and today the Pinot Noir are considered the best German red wines and are always quickly sold out.

The winery's philosophy: "We want to make the best possible out of our good location and the excellent conditions of the terroir. This ambitious goal of the winemaker can only be achieved in agreement with nature. I see the wealth of creation as more than just the basis of ours Work. For me, nature is also inspiration. Every year it surprises with new guidelines and challenges me to give the best wine answer. This discussion takes me further. It leads to new insights, it is the path to quality and to the very individual wines. I have to thank you for that. And for that reason alone I try to do justice to the valuable natural conditions and to make something particularly good out of it. "

Sankt Paul is a single layer of the Schweigener Sonnenberg and is located on what is now French soil in Alsace. The location owes its name to its close proximity to the former Sankt Paulin outpost of the Weissenburg monastery, which is within sight. The monks of the former Cistercian monastery already appreciated the wines of Sankt Paul in the 14th century. Not infrequently, like the wines from the “Kammerberg”, these found their way into the private chambers of the abbots. The very exposed south orientation and the very steep slope. create the best conditions for the grapes to ripen perfectly at all times. The rocky limestone soil has very little soil. After only 25-30 cm, the vine roots meet pure limestone. This fact gives us very mineral and densely structured Pinot Noir with a fine tannin structure.

During the silence on the German and Alsatian side, it was grown on weathered limestone soil with a loamy clay layer. Age of the vines between 19 and 27 years. The grapes were carefully selected by hand, destemmed and gently juiced. The restrained fermentation and further expansion takes place in 228 liter wooden barrels made of the finest French and Palatine oak. The proportion of new barrels was 40%, after extensive yeast storage, the wine was bottled in September 2019. Light, bright yellow. Fine scent of yellow fruits, butter and pear on the nose. Juicy, elegant on the palate with a perfectly integrated oak note. A wine with very good aging potential and a long-lasting finish. Convincing even at a young age.
