2021 Silvaner Natural | Wittmann
The standard in the winery is the biodynamic way of farming with the renunciation of chemically synthetic pesticides, mineral fertilizers and herbicides and the use of natural biodynamic preparations. The entire viticulture and cellar management follow this ideal. For all other wines, manual harvesting in the vineyard is followed by traditional processing and aging in the old Wittman cellar vaults. We believe in this style, which made Rhine wine famous around the world more than 100 years ago. With this wine we are consciously going in a different direction: a wine that follows the ideal of the orange or natural wine.
Intensive vineyard care throughout the year, low yields and consistent selection of the grapes by hand create the basis for high wine quality. The grapes were destemmed individually by hand and then fermented on the skins for 10 days. The free juice was drawn off after fermentation and further stored in a half-length cask for 8 months. The bottling was unfiltered, without further interventions or additives. No sulphites were added during the entire expansion period.
